This is my current favourite cake, because it has cardamom, which I absolutely love.
Due to my background as a Nutritional Therapist, I adapt most recipes, which is my other hobby after sewing. I enjoy creating "healthy eating" meals or making traditionally not so nutritious recipes into a low glycemic, high nutrition one.
The changes I made to this recipe:
Grapeseed oil → 50g olive oil. 30g butter (seed oils are best avoided in cooking)
Dark brown sugar → Coconut sugar (lower glycemic index, helps avoid sugar spikes. Tastes better)
Plain Flour → I use Einkorn flour. Often tolerated by those with wheat intolerance (not celeaic) Higher in protein, and higher in nutrients. Dove make one. However, it is not easy to get, so any wholemeal flour will suffice.
Alternatively, make it as is 😉
This is a recipe on Cookidoo for the Thermomix. However, it's basically grate carrots, mix everything together in mixer or food processor, then add pineapple, coconut and walnuts.
There is a recipe for the frosting as well, which I don't make. I prefer it plain and enjoy the flavours. I can add here if anyone actually reads this 🤣
