I would suggest Poundfabrics.co.uk as well. They give information on the fabric and I have had some good buys from them. I too think cotton jersey would be a good one to start with - some of the other stuff can be slippery and slinky.

What To Do With Fabric Scraps

If I have scraps from expensive cotton fabric, for exemple Tana Lawn from Liberty Fabrics, I use it to decorate back pockets on jeans, instead of decorative stiching. I have also folded it around the hem of trousers or jeans to "reinforce" the edge....
